Tocino Tacos

In order to celebrate the sweetness of tocino, you might need to add some citrus and tartness to the mix. What better way than to have it Mexican-style, with some bright notes of lemon, with the crunch of fresh vegetables like red onion and tomato to bring it all together? This snackable delight is also filling enough for lunch.

Tocino Tacos

  • 225g CDO Funtastyk Young Pork Tocino
  • 4 flour tortillas
  • 2 large tomatoes, thinly sliced
  • 1 large red onion, thinly sliced
  • 1 cup lettuce leaves
  • lemon wedges, for serving
  • guacamole or salsa, for serving

Cook CDO Funtastyk Young Pork Tocino in a skillet over medium heat until fully cooked through and caramelized on the edges. While tocino is cooking, heat flour tortillas over open flame until soft and heated through. Set aside.

To build the tacos, evenly divide tocino between the tortillas. Top with slices of tomato, onion, and lettuce. Serve with guacamole or salsa and wedges of lemon on the side.

Tocino Pizza

Unconventional as it may sound, a pizza is actually the perfect vehicle to showcase tocino. The cheese in the pizza works well with the caramelized flavors of tocino, similar to how the Korean pairing of cheese with sweet, marinated fried chicken works. That salty-sweet combo will make you swoon over this recipe.

Tocino Pizza

  • 1 ¾ cup all-purpose flour
  • 1 ¼ tsp instant yeast
  • 1 tsp salt
  • ½ tbsp sugar
  • 2 tbsp olive oil
  • ½ cup + 2 tbsp water
  • 225g CDO Funtastyk Young Pork Tocino
  • ½ cup tomato sauce
  • 1 cup grated mozzarella cheese
  • 1 tsp Italian seasoning
  • 1 green chili, thinly sliced, optional

In a large bowl, whisk together flour, yeast, salt, and sugar until well combined. Add in the oil and water, then stir until a rough dough forms. Turn the mixture out onto a counter and knead until smooth, about 5-10 minutes. Place into a well-oiled bowl then cover with plastic wrap, and let rest at room temperature for 1 hour or in the fridge overnight.

While dough is resting, cook CDO Funtastyk Young Pork Tocino in a skillet over medium heat until fully cooked through and caramelized on the edges. Set aside.

Pre-heat oven to 500°F. To build the pizza, stretch dough out onto a baking tray until 12 inches in diameter. Cover the center of the dough in sauce, leaving a 1-inch barrier for the crust. Top with cheese, Italian seasoning, then cooked tocino. Place in the oven until edges are golden brown and the cheese is melted, about 10–12 minutes. Remove from the oven and top with green chilies, if using.

Tocino Burrito

If you’re still wary about eating tocino past breakfast time, then start with this recipe that’s made for mornings, but is a step above your daily tocilog. This breakfast burrito combines scrambled eggs, tomatoes, and tocino, in a tortilla, making it an easy, snackable, AM treat.

Tocino Burrito

  • ¼ cup mayonnaise
  • 2 cloves garlic, minced
  • 1-2 tsp lemon juice
  • 225g CDO Funtastyk Young Pork Tocino
  • 4 eggs
  • salt and pepper, to taste
  • 4 flour tortillas
  • 1 red bell pepper, cubed
  • 2 tomatoes, cut into wedges for serving

To make garlic mayonnaise, mix the garlic, mayonnaise, and lemon juice until well combined. Set aside.

Cook CDO Funtastyk Young Pork Tocino in a skillet over medium heat until fully cooked through and caramelized on the edges. While tocino is cooking, heat flour tortillas over open flame until soft and heated through. Set aside.

To make the eggs, beat eggs and season with salt and pepper. Cook in a separate skillet over medium heat until opaque and scrambled, about 3-5 minutes. Remove from heat and set aside.

To build the burritos, evenly divide tocino between the tortillas. Top with scrambled egg and red bell peppers, then roll, securing with a toothpick if needed. Serve with garlic mayo on the side.

Tocino Lettuce Wrap

If you want to go for something healthier, you don’t need to have your tocino with rice. Lighten up your meal with an abundant amount of lettuce, and have your pork in the form of a tocino lettuce wrap. Sprinkle on some sesame seeds and scallions, and you’ll have an Asian dish worth recreating at home.

Tocino Lettuce Wrap

  • 225g CDO Funtastyk Young Pork Tocino
  • 3 tsp sesame seeds
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp black pepper
  • 1 head lettuce, leaves separated
  • ¼ cup scallions, thinly sliced

Cook CDO Funtastyk Young Pork Tocino in a skillet over medium heat until fully cooked through and caramelized on the edges. Set aside. Once cool enough to handle, cut tocino into small bite-sized pieces then place into a large bowl.

Add sesame seeds, sesame oil, soy sauce, and black pepper to the tocino, then stir until well combined. Serve tocino with leaves of lettuce for wrapping, and sliced scallions on the side.

Tocino Bibimbap

With the popularity of K-dramas at an all-time high, indulge in a homemade bibimbap–using tocino. A bibimbap is actually a perfect showcase for tocino, because the sugariness of the marinated pork is not so far off from what you’d get with a pork bulgogi. Put together a bowl with any amount of vegetables and kimchi, and you’ll want to make this everyday.

Tocino Bibimbap

  • 225g CDO Funtastyk Young Pork Tocino
  • 1 tsp sesame oil
  • 1 cup leafy greens, like spinach or kale
  • 1 tsp sesame seeds
  • 2 cups cooked white rice
  • 1 cup diced radish
  • ¾ to 1 cup kimchi
  • ½ cup sliced carrots
  • 2 tbsp gochujang
  • 1 egg yolk

Heat sesame oil in a separate pan. Cook greens until wilted. Remove from heat and garnish with sesame seeds, then set aside.

To build the bibimbap, pack cooked rice into a large bowl. Arrange the cooked greens, radish, kimchi, carrots, and tocino on top of the rice in a circle, leaving a small space in the center. Place gochujang in the center of the bowl, then place the egg yolk over the top. Mix bibimbap well, adding more gochujang to taste.
