You can turn any meat-and-carb combination into excellent fried rice. Shawarma. Pancit palabok. Hawaiian pizza.
This spam pineapple fried rice has everything in common with the polarizing pizza slice: salty pork mixed with the sweet zip of fruit. Ketchup adds color and brings more of that sweet tang into focus. The only thing keeping this from turning into full-blown pizza rice is the lack of melty cheese, but you're more than welcome to add that in. Like any good fried rice, it can take whatever extra ingredients you throw at it.
Ingredients
- 2 tbsp neutral oil
- 3 eggs, beaten
- 6–8 garlic cloves, minced
- 1 red bell pepper, minced
- 1 can Spam, sliced into fat cubes
- 2 ½–3 cups leftover rice
- 1 ½–3 tbsp ketchup
- 1 tbsp soy sauce
- ½ tbsp white sugar
- ½–1 cup canned pineapple, cubed
- ¼ cup green peas, optional
- cilantro, for garnish
- sesame seeds, for garnish
Cook eggs: Heat wok over high heat until smoking. Add oil. Once warm, add beaten eggs. Cook eggs until you get moist and fluffy curds, making sure not to overcook them. Remove from heat.
Cook aromatics and Spam: Lower heat to medium and add more oil to the wok. Once warm, add garlic and bell pepper. Cook, stirring constantly, until fragrant and soft. Add cubed Spam and fry to brown.
Cook rice: Add rice, ketchup, soy sauce, and sugar. Toss and stir until grains are evenly coated and rice is warmed through. Add cooked eggs, diced pineapple and peas (if using). Stir one more time to distribute ingredients. Garnish with cilantro and sesame seeds, then serve.
