People are quick to dismiss steak as something high-brow, but that's not entirely true with this P250 steak with smashed potatoes and bacon-chive vinaigrette recipe. While most cuts are on the expensive side, there are steaks that are also friendly on the pocket. We're talking about flank steak—probably the most affordable steak you can get in the market. It's the star of this cheap steak dinner, which only totals P252.01 (as of writing) per person. That's only a little over P500 for two, sides included!

Steak

  • 1 flank steak
  • juice from 1 lime
  • 2 tbsp brown sugar
  • ¼ cup soy sauce
  • ¼ cup neutral oil
  • salt and pepper, to taste

Smashed Potatoes

  • 1 ½ cup marble potatoes

Bacon-Chive Vinaigrette

  • ½ cup bacon, finely chopped
  • ¼ cup oil
  • 1 tbsp red wine vinegar
  • 2 tbsp chives, chopped

Garnish

  • 2 eggs
  • 2 tbsp garlic, grated
  • ¼ cup parsley, finely chopped
  • ¼ cup chives, finely chopped
  • 3–4 tbsp oil

Marinate steak: Combine lime juice, brown sugar, soy sauce, oil, salt, and pepper in a bowl. Place flank steak in the mixture and let marinate for least 30 minutes to overnight.

Boil potatoes: Add potatoes to a pot. Add enough cold water to submerge the potatoes. Heat pot over medium-high heat and boil for 15 minutes, or until potatoes are fork-tender.

Bake bacon: While potatoes are cooking, preheat the oven to 350°F. Arrange bacon on a baking sheet. Bake in the preheated oven for 8-10 minutes until the fat has rendered out.

Smash potatoes: Once potatoes are tender, drain and smash each of them using the back of a spoon. Set aside.

Make vinaigrette: Combine oil and red wine vinegar in a bowl. Add cooked bacon and chives. Mix until well combined. Pour bacon-chive vinaigrette over smashed potatoes and mix. Set aside.

Cook steak: Once your steak is ready, heat oil in a pan over high heat until smoke forms. Carefully add your steak to the pan and cook for 6 minutes, or until it develops color. Flip steak and cook the other side for another 6 minutes. It should be ready once the steak has a nice golden crust, and is firm to the touch. Set steak aside and let rest for 5 minutes before slicing.

Cook eggs: While your steak is resting, fry eggs in the same pan to desired doneness.

Assemble and serve: Combine garlic, parsley, chives, and oil in a bowl to make the garnish. Arrange the steak, smashed potatoes with bacon-chive vinaigrette, and eggs on a plate. Spoon garnish on top of the steak. Serve immediately.

Notes

You can cook the bacon in a pan over the stove.
