  • 2 150g cans CDO Home-Style Corned Beef
  • 3 tbsp neutral oil
  • 1 cup sliced onions
  • ¼ cup minced garlic
  • ½ cup peeled and chopped potatoes
  • ½ cup chopped red bell pepper
  • 1 large egg
  • 50g grated mozzarella cheese
  • 50g grated cheddar cheese
  • garlic rice, for serving

Cook aromatics: Heat oil in a skillet or cast iron pan over medium heat. Add onions and garlic. Cook, stirring frequently, until onions are soft and translucent.

Cook vegetables: Add potatoes and cook, stirring constantly, until starting to brown. Add bell peppers and cook until soft.
