Chowking's Chinese-style fried chicken’s skin is light and crisp, a shell encasing aggressively flavorful meat. We use classic Chinese ingredients for the chicken marinade: custard powder, five-spice, and oyster sauce.
Ingredients
Chicken Marinade
- 1 kg chicken drumsticks
- 1 tsp chicken powder
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp custard powder
- ⅛ tsp or big pinch of five-spice powder
- 1 tbsp oyster sauce
Batter
- ½ cup rice flour
- ½ cup cornstarch
- ½ cup flour
- 1 tsp salt
- 1 tsp baking soda
- 1–1 ½ cups cold water
- rice flour, for dredging
- neutral oil, for frying
For Serving
- plain or fried rice
- fried shrimp chips (kropek)
Combine chicken and marinade ingredients in a bowl. Chill in the fridge, covered, and marinate overnight.
Heat oil in a wok or large heavy-bottomed pot to 350°F. Prepare a metal rack or heatproof plate lined with paper towels.
Whisk together rice flour, cornstarch, flour, salt, baking soda, and cold water in a bowl. Keep cold.
Lightly dredge chicken with rice flour. Coat in wet batter and carefully lower into the hot oil. Fry chicken, working in batches to avoid overcrowding, for 7–9 minutes or until cooked through. Transfer to the rack or lined plate to drain oil.
Serve chicken with rice and kropeck.
