How to make Conti’s-inspired baked salmon

The dish comes together in three parts:

  • Making the cream cheese topping
  • Baking the salmon
  • Cooking the buttered vegetables

Before starting, make sure to preheat your oven or air fryer to 350°F (or 180°C). For less cleanup, you can bake your salmon in a Pyrex or ceramic baking dish, add the buttered vegetables there, and bring everything straight to your dinner table.

Cream Topping

  • ¾ cup cream cheese
  • ¼ cup Kewpie mayonnaise
  • ¼ cup all-purpose cream
  • 1-2 tbsp Parmesan cheese
  • 1 tbsp all-purpose flour
  • 1 tbsp minced garlic
  • ½ tbsp lemon or calamansi juice
  • 1 ½ tsp white sugar
  • ¼ tsp salt

Salmon

  • 1kg salmon
  • salt

Vegetables

  • 3 tbsp unsalted butter
  • ½ cup carrots, small diced
  • ½ cup sayote, peeled and diced
  • ½ cup green beans, trimmed, cut into 1-inch pieces
  • ½ cup corn
  • salt, to taste

Preheat oven or air fryer to 350°F (180°C).

Make the topping: Combine all topping ingredients in a bowl. Mix until smooth and well incorporated, then set aside. For a smoother consistency, run the topping through a food processor or a blender.

Prepare and bake salmon: Pat salmon dry with a paper towel and season lightly with salt. Lay the salmon—skin-side down if there is skin—on a baking or air fryer tray lined with parchment paper. Spread the cream topping onto the salmon, making sure to cover the surface. Bake or air fry for 15–20 minutes.

Cook vegetables: While the salmon bakes, add butter to a pan over medium heat. Add carrots and sayote and cook, stirring frequently, until slightly softened, about 3-4 minutes. Add green beans and cook until softened, about 1-2 minutes. Then add corn and cook for another 1–2 minutes. Season with salt and set aside.

Serve: Transfer salmon onto the center of a deep platter. Plate buttered vegetables around the fish. Serve warm.
