In case you didn't know yet, Mushroomburger's burgers (except the Mushroom Sandwich) are actually not completely made out of mushrooms. They're a 50/50 mix of mushrooms and meat. While we do love their burgers, we were aiming to make something vegetarian-friendly. Enter our fried whole mushroom burger recipe.
This burger—which we call our shroom-wich—is made up of a whole, fried mushroom patty, homemade garlic aioli sauce, and all the fix-ins of a regular burger.
Ingredients
Garlic Aioli
- 1 large egg yolk
- 1 ¼ tsp dijon mustard
- 1 tbsp lemon juice
- ¼ tsp salt
- 1 cup canola oil
- 3 cloves garlic, minced
Batter
- ½ cup milk
- 2 tsp white vinegar
Breading
- ½ cup + 2 tbsp all-purpose flour
- 2 tbsp cornstarch
- 1 ½ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp ground oregano
- ¼ tsp cumin
Fried Mushrooms
- 1 pack enoki mushrooms
- oil, for deep frying
Burgers
- 4 burger buns
- ½ cup caramelized onions
- 2 medium tomatoes, sliced into rounds

Prepare Aioli and Mushrooms
Make garlic aioli: Combine egg yolk, dijon mustard, lemon juice, and salt in a bowl. Whisk until well combined. Continue whisking while slowly streaming oil into the egg yolk mixture. If done properly, your sauce should have thickened. Add minced garlic and fold into the mixture with a rubber spatula until well combined. Store in the fridge until ready to use.
Prepare for frying: Heat oil in a wok or deep skillet to 350°F.
Prepare batter and breading: Add milk and vinegar to a bowl. Mix well until thickened, about 5 minutes. In a separate bowl, combine flour, cornstarch, salt, pepper, garlic powder, paprika, ground oregano, and cumin.
Batter and fry mushrooms: Divide enoki mushrooms into four parts. Dip each piece of mushroom in the wet batter, then toss in the breading until evenly coated. Once all pieces are battered, fry mushrooms in hot oil until golden brown, making sure to keep the pieces intact. Set fried mushrooms on a rack to drain excess oil. Season with salt while still hot.
Assemble Burgers
Toast buns: Slice burger buns in half with a bread knife. Toast bun halves in a hot pan or toaster until the cut sides have browned.
Assemble burgers: Spread a thin layer of aioli on both sides of the buns. Stack the following ingredients over the bottom bun in this order: fried mushrooms, caramelized onions, tomatoes, and arugula. Serve while hot.
Notes
Instead of milk and vinegar, you can use buttermilk for the batter.
