The filling is fresh chorizo mixed with cream cheese and mozzarella, but the devil in the detail is the wrapper— it's breaded rather than traditionally only fried along with the filling. Ingredients
- 400g chorizo
- ¾ cup cream cheese
- 1 cup mozzarella, grated
- 6–7 large lumpia wrappers
- 1 ½ cups flour
- salt and pepper, to taste
- 3 eggs, beaten
- neutral oil, for frying
In a pan over medium-high heat, crumble the chorizo and cook until toasted.
Remove from heat and drain the oil. Let cool completely.
In a bowl, combine cooked chorizo, cream cheese, and mozzarella.
Take the mixture and place in the center of the lumpia wrapper.
Seal the edges with egg and fold into a triangle. Set aside.
Prepare two bowls for dredging. In one bowl, add the flour and season with salt and pepper.
In the second bowl, add the beaten eggs. Take the filled wrappers and cover in flour, then dip into the eggs, and then back into the flour.
- Repeat until all pieces are breaded. Set aside.
Add oil to a large skillet over medium-high heat. Fry wontons until golden brown, about 4 minutes on each side.
- Drain oil and let rest for 1-2 minutes before serving.
