This recipe recreates the Choco Mallows of your childhood: marshmallow-topped biscuits coated in chocolate. This version has a cakier base made simple with butter and graham crackers. To get perfectly shaped bases, use a cookie cutter. Combining oil with melted dark chocolate helps it solidify into a coating.

Mallows

  • ½ cup water, divided
  • 1 ½ tbsp powdered gelatin
  • 1 cup granulated sugar
  • ¼ cup light corn syrup
  • pinch of salt

Chocolate Coat

  • 2 cups dark chocolate pieces
