Italianni's-Inspired Sicilian Salad with Mangoes and Grapes

If you've ever eaten in Italianni's, you've probably noticed that every table has their signature Sicilian Insalata, or Sicilian-style salad. It's become a favorite of many, including a Pepper reader who asked us to hack it. This salad has many flavors and textures to enjoy: sweet mangoes, plump grapes, crunchy walnuts, juicy tomatoes. We add chicken for some protein.

Dressing

  • 4 anchovy fillets, finely chopped
  • 1 clove garlic, minced
  • ¼ cup mayonnaise
  • ¼ cup olive oil
  • Salt and pepper, to taste

Salad

  • 1 cup cooked chicken breast, diced
  • 2 heads romaine lettuce, chopped into 1-inch pieces
  • ½ cup mangoes, diced
  • ½ cup red grapes, halved
  • ¼ cup walnuts, chopped
  • ¼ cup tomatoes, diced
  • ½ cup croutons
  • black pepper, for serving

Make the dressing: Whisk together anchovy fillets, garlic, mayonnaise, and olive oil in a large bowl. Season to taste with salt and pepper.

Toss salad: Add chicken into the bowl and toss to coat. Add lettuce, mangoes, grapes, walnuts, and tomatoes. Toss again until leaves are evenly coated and ingredients are distributed. Transfer to a serving platter and top with croutons and a crack of black pepper.
