Mozzarella sticks are the first thing gone at every dinner party. There’s nothing better than biting through the crispy, golden crust to find soft, gooey cheese in the center. Put a Filipino twist to this classic finger food by swapping the mozzarella out for kesong puti.

What is Kesong Puti?
Kesong puti literally means "white cheese". This Filipino cottage cheese is made from the milk of carabao, goat, or cow, and is often packaged in banana leaves. It's soft and squishy, and tastes mildly salty and sour. Because it is unaged, kesong puti has little to no odor.

Kesong puti’s creamy and mildly tangy flavor profile makes it the perfect thing to pair with meat, or to slide into sandwiches. A high melting point means it holds well under heat, making it great for frying! Right out of the fryer, you’ll get the perfect ooze and a satisfying cheese pull.

Serve these nuggets with marinara sauce or a creamy garlic dip for a guaranteed crowd favorite at your next dinner party.

How to get perfect nuggets

Cheese has a lot of moisture. If not breaded well enough, it can leak out or even burst while deep-frying.

To prevent this, we dredge our nuggets in flour, then coat in egg and breadcrumbs twice. Bonus: That thick coat prevents leakage while giving the nuggets extra crunch once they come out of the fryer!

Make sure to also pop the breaded nuggets in the freezer for an hour or two before frying. This helps them hold their shape while deep-frying.
