Easy Kimchi-Green Onion Sauce

As a condiment, kimchi is ready to join any meal straight out of the jar. But its unique fermented flavor makes it a great ingredient, too. Mix chopped kimchi and minced green onions, for example, and you get a bright, spirited super-condiment that brings a refreshing bite to any dish.

Like ginger scallion sauce on poached chicken, we found that this chunky sauce pairs particularly well with grilled meats. Spoon some over pork or beef belly to cut through the fatty richness.

  • 6 scallions, thinly sliced
  • ⅓ cup bottled kimchi, chopped finely
  • ¼ cup vegetable oil
  • ½ tbsp sesame oil
  • 4 tsp soy sauce
  • 4 tsp unseasoned rice vinegar
  • ¼ tsp sugar

Make sauce: Add all ingredients to a small mixing bowl. Stir to combine and let sit for 15 minutes before serving to let the flavors meld. Store leftovers in the fridge inside an airtight container.
