When Nathaniel's opened its first branch in Metro Manila, it wasn't long until it climbed to the top of the city's (unofficial) list of best buko pandan. Nathaniel's Buko Panda Salad is beloved for its subtle sweetness and the fact that it's best enjoyed frozen.

This hack doesn't quite get the consistency of the original when it comes to its texture. But we still suggest you eat it right out of (actually, you might want to wait a few minutes) the freezer.

Sauce

  • 4 cups all-purpose cream
  • 2 cups condensed milk
  • 1 cup milk
  • 2 tsp buko pandan extract

Salad

  • 2 cups chopped buko
  • 2 cups green gulaman, cut into squares

In a large bowl, whip heavy cream until soft peaks form. Set aside.

In a separate bowl, combine condensed milk, milk, and buko pandan extract. Add in chopped buko and gulaman. Mix together until well combined. Fold the heavy cream onto the buko mixture until well incorporated. The bubbles formed while doing this process is normal.

Transfer the mixture to a freezer-safe container. Chill for at least 4 hours up to overnight before serving.
