This one-pan turon recipe still delivers the same experience—the crunchy wrapper, the thick caramel, and the soft bananas but without having to wrap them individually. Instead, it fries the wrappers separately, then cooks the bananas in the caramel, topping the wrappers onto the sweet saba at the end. What you get is a strikingly tall dessert that you can crush before devouring.
Ingredients
- neutral oil, for frying
- 4–6 lumpia wrappers
- ½ cup butter
- 2 cups brown or muscovado sugar
- 1 cup heavy cream
- 6–8 saba bananas, halved lengthwise
Heat oil for frying in a pan to 350°F.
Add lumpia wrappers, frying until golden and crispy, about 5–10 seconds each.
Remove from oil and let drain on paper towels. Set aside.
In a large pan over medium heat, melt the butter.
Add the sugar and cook until just melted. Once melted, add heavy cream and stir until well combined.
Add the bananas to the caramel, coating each banana.
Cook until the caramel begins to bubble and thicken and the bananas have softened, about 15 minutes.
Remove from heat. Top with fried lumpia wrapper and serve.
