We love Pancake House. That said, we still have one more food hack up our sleeves. This time, we made their Hot Roast Beef.
It takes about three hours to make this, but this recipe may be slightly more flavorful than the original. The roast beef tastes a tad salty, but you really shouldn't be eating it on its own. Slap it onto the sandwich, and make yourself a hefty bite of everything like a normal person.
Ingredients
Roast Beef
- 500g beef sirloin or tenderloin, whole
- 2 tbsp neutral oil
- salt and pepper, to taste
Gravy
- ¼ cup butter
- ¼ cup white onions, diced
- ¼ cup flour
- 2 cups water
- ½ cup canned button mushrooms, sliced and drained
- 3 tbsp Knorr liquid seasoning
- salt, to taste
Mixed Vegetables
- ½ cup corn kernels
- ½ cup carrots, diced
- 1 tbsp butter
- salt and pepper, to taste
Assembly
- 2 slices bread, about 1-inch thick
- 2 cups lettuce, for serving
- 1 cup mashed potatoes, for serving
- parsley, chopped for garnish
Prepare for roasting: Preheat oven to 350°F. Place the meat on the baking tray and coat with oil. Season liberally with salt and pepper. Place meat in the preheated oven and cook for about 1 hour 30 minutes, or until the center of the roast reaches 160°F with an instant-read thermometer. Remove beef from the oven and let rest for 20 minutes.
Prepare roast beef: Once cool enough to handle, slice beef into thin rounds. Return sliced beef to the baking tray with any liquid, then keep warm under foil.
Make gravy: Melt butter in a pan or saucepan over medium heat. Add onions and cook until slightly translucent, about 3 minutes. Add flour and whisk to combine. Once mixture is bubbling, add water in small amounts while whisking the mixture until thickened. Add mushrooms and cook until just heated through, about 1 minute. Add Knorr and season with salt to taste, then set aside.
Cook vegetables: Melt butter in a small pan over medium heat. Cook carrots until softened, 5-8 minutes. Add corn and cook, stirring frequently, until carrots are completely tender and corn is heated through. Divide the vegetable mixture into two small dishes.
Assemble: Place each small dish of vegetables on separate plates. Then divide the lettuce and mashed potato amongst the plates. Add a slice of bread to each plate and top with slices of roast beef. Generously spoon gravy over roast beef and garnish with parsley before serving.
