In Thailand, when a dish needs a little extra something, you reach for prik nam pla. This all-around sawsawan has chilies (prik) and fish sauce (nam pla) as its core ingredients—everything else is to taste. Take this recipe as a guideline for you to tweak and tinker with.

And of course, this funky, spicy condiment plays well with Filipino food!

Ingredients

  • 2 cloves garlic, thinly sliced
  • 2 tbsp thinly sliced shallots
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1–2 tbsp chopped Thai or local chilies
  • 1 tbsp palm or brown sugar

Make prik nam pla: Add all ingredients in a small bowl. Stir to combine. Let sauce steep for at least 10 minutes, then serve.
