Ingredients
- 1 ½ cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup milk
- ¼ cup fresh calamansi juice
- ½ cup butter
- 1 cup sugar
- 2 eggs
Preheat oven to 350°F. Grease or line muffin pans with paper liners.
Combine flour, baking powder and salt in a bowl. Set aside.
In another bowl, combine milk and calamansi juice. Set aside.
In a third bowl, mix butter and sugar with a rubber spatula until fluffy and creamy, 2–3 minutes.
Add eggs one at a time, mixing until well incorporated. Stir in milk mixture and mix until combined.
Fold in flour mixture. Stir until just incorporated and no streaks of dry flour remain.
Pour the batter into prepared muffin pans until about ¾ full. Bake for 18–23 minutes, or until an inserted toothpick comes out clean. Let rest in the pan until cool enough to handle. Serve warm.
