Ripe saba bananas, dipped in batter then cooked in a pan, give these pancakes distinct bites of creamy fruit. To get some of that crisp maruya-esque texture, you want dark pancake edges just shy of burnt. Finish it off with powdered sugar for a sweet breakfast; add a generous scoop of vanilla ice cream if you're looking for dessert.
