Inspired by salt and vinegar chips, these crispy wings have a glaze that's as addictive and invigorating as the snack. It has everything you love in the classic flavor combo: the punchy tang of vinegar followed by a dropkick of salt. Double-fry the wings for extra crunch.

Marinade

  • 1 kg chicken wings, flats and drumlets separated
  • 2 tsp brown sugar
  • 6 tbsp white vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • salt and pepper, to taste

Coating

  • 1 ½ cups cornstarch, for coating
  • 2 tsp salt
  • neutral oil, for frying

Glaze

  • ½ cup white vinegar
  • 1 tbsp brown sugar
  • 3 tbsp water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp cornstarch

Garnish

  • sea salt
  • parsley, chopped
