Topside Diner-Inspired Garlic Parmesan Wings

Topside Diner is a guilty pleasure for anybody who's ever spent time in Taft. So as a reminder of all the times we slipped on plastic gloves for a P139 meal, we hacked Topside Diner's Garlic Parmesan wings, complete with processed cheese shavings and extra garlic butter sauce.

Chicken Wings

  • 800g chicken wings
  • 1 tsp pepper
  • 2 ½ tsp salt
  • neutral oil, for deep frying

Garlic Butter Sauce

  • ½ stick butter
  • 2 ½ tbsp minced garlic

Breading

  • 1 cup cornstarch
  • 2 tsp garlic powder
  • salt, to taste

Dressing & Garnish

  • 3–4 tbsp Parmesan cheese
  • grated cheese, any brand
  • steamed rice, for serving

Marinate chicken: Add chicken to a container and season with salt and pepper. Let marinate for 30 minutes.

Make garlic butter sauce: Melt butter in a saucepan over medium-low heat. Once completely melted, add garlic to infuse its flavor into the butter. Stir garlic butter sauce for 1–2 minutes or until fragrant. Remove from heat. Once cool, strain the garlic and transfer the sauce into a container. Set aside.

Prepare for frying: In a wok or deep pot, heat frying oil to 350°F. Meanwhile, combine cornstarch, garlic powder, and salt in a large bowl. Toss chicken wings into the cornstarch breading, coating each piece all around.

Fry chicken: Once oil is hot, fry chicken in batches until crispy golden brown and fully cooked through, about 7 minutes. Drain chicken on a paper towel-lined tray or a rack. Let cool for 10-15 minutes.

Double-fry chicken: Fry the chicken wings again for 3 minutes, until golden brown.

Serve: Transfer chicken to a bowl and toss in Parmesan cheese and ⅓ cup of garlic butter sauce. Place chicken on a serving platter and top with grated cheese. Serve chicken with steamed rice and remaining garlic butter sauce for dipping.
