Ingredients
- 2 150g cans CDO Karne Norte
- 1 tbsp oil
- 1 medium potato, diced
- ½ cup red bell pepper, diced
- ¾ cup tomato sauce
- 2 tsp cumin
- 1 tsp chili powder
- ½ cup canned chickpeas or beans of choice, drained
- ½ cup corn, drained
- sour cream, for serving
- cilantro, for serving
Cook vegetables: Heat oil in a pan over medium heat. Add cubed potatoes and red bell pepper and cook until tender, about 5-8 minutes.
Add karne norte: Add CDO Karne Norte, tomato sauce, cumin, and chili powder to the pan. Cook until the sauce has thickened and reduced, about 8–10 minutes.
Finish and serve: Add the canned beans and corn and stir through, cooking until just heated through, about 4–5 minutes. Serve with rice and sour cream, and garnish with cilantro.
